Nihonbashi Tamai is a specialty restaurant for anago (conger eel) dishes, which is rare in Japan. The beautifully glazed grilled anago bento, which can be enjoyed anywhere, is also popular, and the container used is Akta's "One Fold." Why did they choose Akta's container? We asked for the reason. "I liked that it saves space. The bento factory needs space, but Tamai operates in the middle of Tokyo, so we can't secure a very large area.
